Mexican Spicy Brown Rice
This was an accidental find. I've been cooking rice for years, but I never quite got the hang of making perfect Mexican rice. It was always too mushy and bland, and I tried different recipes with the same substandard results. I finally discovered what I was doing wrong, and fixed it. This is a great, healthy, spicy dish that I am newly in love with, thanks to my rice cooker and some imaginative doins.
Ingredients: 1 cup Uncooked Brown Rice, 1 cup fat free, low sodium organic chicken stock, 1 tbsp.canola oil, one jalepeno pepper, half of an onion, 2 cloves of garlic, one can of stewed tomatoes, and some black pepper.
In a blender, combine tomatoes (and juice), entire jalepeno, and half of the stock. Blender it until it's relatively smooth. Let it sit.
In a saute pan on high, combine oil and dry rice. Stir around until the rice turns toasty brown. Be careful not to burn the rice kernels.
Transfer rice and oil to the rice cooker, and add the sauce mixture. Add pepper to taste, then turn on the cooker and let it go. You can also use a regular saucepan but it's messier as the rice may splatter. After some of the fluid dissipates, add the rest of the chicken stock, and continue cooking. You'll need to add water in 1/2 cup increments as the sauce evaporates until the rice is completely done. It will be slightly crunchy because of the brown rice natural texture, but it should be soft enough to chew. If you need it less spicy, only add 1/2 the jalepeno pepper.

Repugnicans I Know
Every day there's at least one: smug bastards without conscience who voted for the Bush regime. They don't have to say it, but it becomes like an open sore on their face that I can't help but stare at. Yesterday I had a "soccer mom" hair moment and was joking about it. This guy says, "The only thing wrong with soccer moms is that they voted for Clinton."
I'm sorry? Pardon me while I bash my head on a hard surface until I'm unconscious or you go away! What am I supposed to respond to that? I mean, jesus christ I'm only human, and I felt like ripping his head off with my bare hands! As jilted liberals, we have to do something with this rage. Apparently the fix was in, and our votes didn't count where it mattered most. That's one thing. Now though, we have to continue to deal with these assholes on a daily basis, who haven't changed, haven't opened their eyes yet, and who continue to spew so-called conservative trash my way. I just don't know what I'm going to do anymore. I can't hide in a hole for the rest of my life, and you can't talk to these people. Where does that leave us?

Post Election Hangover
I've been searching for ways to explain the last days since the November 2nd pseudo-election. I mean, I know we all voted, we were out there, I saw us. I saw hundreds of kids in the rain, in the freezing weather, and lined up for hours, just to be able to say, "no more bush, please." So please tell me what the hell went wrong. I'm sure that the repugnicans will all tell us that we were just mistaken. They will say that exit polls were simply wrong, but only in the states that mattered, like Ohio and Iowa and Florida. I'm prepared to put on my little tin foil hat and join the conspiracy theorists, because otherwise most of my country's citizens have failed me. They are imbeciles...and how could I live with that knowledge?
